Directions

    Toss the chicken with 1 tbsp of the cornstarch and a pinch of salt until evenly coated.

    Whisk the soy sauce, honey, garlic, ginger, sesame oil, remaining cornstarch, and 1/4 cup of water.

    Heat the neutral oil in a wok or large skillet over high heat until it shimmers.

    Cook the chicken in a single layer 3 to 4 minutes without moving it much, then stir and cook 2 more minutes until golden; transfer to a plate.
